easy peasy bacon n egg pie.

Awww yum, this is one of my absolute favourites – the good ole kiwi bacon n egg pie is perfect hot for lunch or an easy sunday dinner, cold on a picnic or as leftovers the nextday! I love making and eating this, the ingredients can be slightly personalised to what you like or whats in your fridge too… Also, adding relish into this pie makes it taste extra good, or simply add after once  pie is cooked :)

serves.this amount makes enough for 3-4 people, but would increase no. eggs and bacon if feeding burly blokes or to feed more.

ingredients.
2 sheets puff pastry
175g packet of bacon (or leftover xmas ham), sliced into chunks/small pieces
4 eggs (minimum only, can use more if want to make a bigger pie)
2 tomatoes, sliced (some ppl HATE tomato in their pies, up to you)
1 onion (red / brown / white), diced or 3 spring onions, chopped
1/2c fresh parsley / basil, chopped  (or whatever herbs you like)
1c grated cheese (tasty, mild and mozzarella all work a treat)
a little salt n pepper, milk & sesame seeds

*optional extra*
a few tablespoons of red capsicum, red capsicum chilli or beet apple n orange relish!!!

I find it easy to have all your ingredients prepped & ready to go first, so you can throw the pie together layer by layer. So slice up onion, tomato, fresh herbs and bacon. Grate cheese if including too. Turn on oven to 180c.

Line a decent sized dish (5cm deep, 15cm long) with one sheet of pastry (may have to get the rolling pin out and roll with some flour to make it go further). Leave sides hanging out so can fold over later.

Sprinkle the base with bacon and onion. Add a few big tablespoons of relish here too if you have some.
*could also add corn, red capsicum or even peas here

Throw on your fresh herbs and a layer of your cheese (leave 1/3 of your cheese for the top later)

*cheese is optional. tastes just as good without it.

Next, cover with a layer of tomato (if you’re adding it), with a decent sprinkle of salt n pepper.

Break all of your eggs onto the tomato, try to equally distribute egg over most of the surface. Then cover your eggs with the remaining cheese and any leftover herbs.

Drag the 2nd pastry sheet over the top, fold over the sides from the lower pastry layer and squeeze n scrunch the 2 pieces together with your fingers as you go around the edges. Cut off any extra pastry – can be used to decorate topping as per next step.

Brush edging and top of pie with a little milk. Use knife to add a few holes into the top and sprinkle with sesame seeds.

Cook for an hour at 180 degrees, or until pie is golden n crusty on top.
Serve with relish, salad and/or chips. yummo!
