my first relish batch.

My first batch of relish was officially made back in August 2007 and was a ’saucy’ red capsicum one which is now referred to as ‘the saucy original’ relish this. relish! Making the relish back then was a very manual, time consuming process which I’ve continued to develop over the past two years. Wow, it seems like those first few weeks were only a few months ago…not a few years. I wonder if I knew what I was getting myself into whether I would still have the guts to do it all over again…? (absolutely!)

There is quite an art to learn in preparing food, and I found once I got a system in place & with practise, I could prepare the ingredients in record time! Initially it took over 4 hours to make my very first batch, and today I make it just under an hour.  Scroll down thru the images, and you will see the original preserving jars (not v.sexy) and the classy product name I first came up with…
